Quick Answer
A suribachi is a ridged ceramic bowl for grinding food, not a smooth mortar for crushing spices. The grooves cut into the inside wall create friction against seeds, roots, and pastes. What the Grooves Actually Do
Look inside a suribachi and you’ll see radiating lines cut across the interior surface, sometimes crossing into a diamond grid. This pattern is called kushime, meaning comb-teeth marks, because they’re traditionally cut with a comb-like tool before the clay is fired.
The grooves aren’t decorative. They’re the whole mechanism.
When you grind sesame seeds against a smooth ceramic surface, the seeds slide. They roll under the pestle instead of breaking open. A groove interrupts that slide. It catches each seed for a fraction of a second, long enough for the pestle to crush it against the ridge. Repeat that a few hundred times and you get a paste, not a bowl of bruised whole seeds.
A plain mixing bowl can’t do this. Neither can a smooth ceramic mortar, at least not efficiently. That’s the real structural difference between a suribachi and a Western mortar: the mortar relies on downward force against a hard, even surface, which works well for cracking dried spices like peppercorns or cardamom pods. A suribachi relies on friction across a textured surface, which works better for turning soft, oily, or fibrous ingredients into a paste.
Neither design is better in the abstract. They’re built for different jobs.
The three SOONEAR-adjacent product listings we reviewed confirm this construction pattern. The Small Suribachi (15.0cm diameter, 7.0cm height) and Medium Suribachi (18.5cm diameter) are both described as ceramic with the interior comb pattern. The Large Suribachi (24cm, or roughly 9.5 inches) is listed as Japanese-made ceramic with the same ridged interior. None of the listings include price, so we can’t compare cost here.
The Wood Behind the Surikogi
The pestle matters as much as the bowl. A metal or glass pestle would chip the ceramic ridges or slide uselessly across them. Wood grips the grooves and gives slightly under pressure, which is part of why the pairing works.
Sanshō, or Japanese pepper tree wood, is the traditional choice. It’s hard, dense, and grows with small knots and irregular bumps along the shaft. Those bumps aren’t a flaw. They add extra grip in the hand, especially when your fingers are wet from grinding.
Hinoki, Japanese cypress, is a common modern substitute. It’s straighter-grained, lighter in color, and generally easier to source in longer, uniform lengths. Walnut is also used in some pestles sold outside Japan, prized for durability and a tighter grain that resists splitting.
None of these woods is objectively correct. Sanshō gives you grip texture. Hinoki gives you a smoother, more uniform surface. Walnut gives you density and a furniture-grade finish. The Rikumo listing for a Natural Surikogi Pestle doesn’t specify wood species or price, so if wood type matters to you, confirm it before ordering.

When You Need One and When You Don’t
A suribachi earns its space in a kitchen that regularly makes small batches of ground or pureed ingredients by hand: toasted sesame for dressings, grated yam for tororo, miso blended smooth before adding to soup.
A food processor is the more practical tool if you’re grinding in bulk, cooking for a crowd, or short on time. It’s faster, it’s louder, and it doesn’t require the wrist motion a surikogi does. If you make sesame dressing twice a year, a food processor pulse or a spice grinder will get you a usable result without a new bowl in your cabinet.
A Western mortar and pestle is the better call if your main use case is crushing dried spices, garlic, or peppercorns. The smooth bowl surface is easier to clean and doesn’t hold onto oils from wet grinding the way a ridged interior does.
Buy a suribachi if you cook Japanese food regularly and want texture control that a blade can’t replicate, like partially crushed sesame with some whole seeds left intact. Skip it if your grinding needs are occasional or already served well by tools you own.

The Maker’s Note
We don’t manufacture suribachi, so this is a design read from the outside, the way we’d evaluate any tool before deciding whether to make one ourselves.
The groove pattern is a forming decision made before firing, not after. Ceramic clay typically shrinks somewhere around 10 to 12 percent during firing. That means the comb-cut grooves have to be cut deeper and wider at the leather-hard stage than the maker wants in the finished piece, or shrinkage flattens the ridges into something too shallow to grip food. Get that math wrong across a 15cm bowl versus a 24cm bowl, and the smaller piece is far less forgiving of error.
That precision comes at a cost. Ridged interiors trap ground sesame oil, tofu residue, and grated yam fiber in every channel. A flat-bottomed sponge wipe won’t clear them. Most suribachi we’ve seen documented call for a stiff brush and hand washing, not a dishwasher cycle, because sustained heat and detergent jets can wear down glaze sitting inside narrow grooves over years of use.
In a real kitchen, this plays out as a five-minute cleanup tax on every use. You’ll toast a tablespoon of sesame, grind it in under two minutes, and then spend longer scrubbing the bowl than you did cooking. That tradeoff is the whole design: a tool built for texture, not for speed, and not for convenience after the meal either.
